medium-dark roast The BRUSTAR Story It was in the early 90’s that I’d just started working in a resort during the summer holidays on the island of Mallorca in Spain. On my first night out, at midnight. seated at the bar counter in a quaint typical Spanish cafe, the gorgeous barista girl suggested a ‘Cortado” coffee I said I didn’t know what a Cortado was, and, that I actually preferred to drink tea! She was understandably confused but insisted I just try this very short espresso with thick silky red-brown crema, topped with two splashes of warm milk and a little sugar. And the magic happened in that first sip! A unique and decadent bold chocolatey mocha taste with heavy mouthfeel left me with the most intoxicating and powerful memory. and changed my destiny. In that first week of my arrival. I knew I had fallen in love with that culture of celebrating simple pleasures in food, drink and socialising I lived and worked there for a number of years, Ultimately though. my home country was calling. And said I must bring back that same delicious coffee experience with me! This has become my career for over a decade and includes deep involvement in all facets of coffee. from regular trips to coffee exhibitions in Italy and participation in national barista Championships. This bag of coffee is not just a bag of beans – it’s the insights and very necessary years of experiences I’ve gained on how to perfect a roast profile and deliver a rich satisfying coffee beverage.
